How it works
Celsius and Fahrenheit are converted with the exact formulas
°F = °C × 9/5 + 32 and °C = (°F − 32) × 5/9. Gas marks come from the
standard British scale, where gas mark 1 is 275 °F and every whole mark adds 25 °F
(°F = 250 + 25 × gas mark), plus the two low settings gas mark ¼ (225 °F) and
gas mark ½ (250 °F). Because recipe books round those marks to tidy Celsius numbers, the tool
also shows the closest standard oven setting — 180 °C, 350 °F and gas mark 4 are the same
dial, even though 180 °C is exactly 356 °F.
Fan or convection ovens circulate hot air, so food cooks faster: the widely used rule is to drop the conventional Celsius figure by 20 °C (a moderate 180 °C oven becomes 160 °C fan). The oven descriptions you see in older recipes — cool, warm, moderate, hot — are mapped to the same chart.
